Baked Summer Squash

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs summer squash
  • salt and pepper
  • 1 cup whole wheat flour
  • 1 -2 teaspoon dried thyme
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup tomato juice

Recipe

  • 1 heat oven to 400. oil a large baking dish.
  • 2 slice squash lengthwise or diagonally into 1/8 inch thick slices.
  • 3 season with salt and pepper to taste.
  • 4 place in baking dish to make overlapping layers.
  • 5 combine remaining ingredients and spread on top of summer squash.
  • 6 bake until lightly browned, 20-25 minutes. serve hot.
