Baked Summer Squash

Ingredients
- Servings: 4
- 1 1/2 lbs summer squash
- salt and pepper
- 1 cup whole wheat flour
- 1 -2 teaspoon dried thyme
- 1/2 teaspoon curry powder
- 1/8 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup tomato juice
Recipe
- 1 heat oven to 400. oil a large baking dish.
- 2 slice squash lengthwise or diagonally into 1/8 inch thick slices.
- 3 season with salt and pepper to taste.
- 4 place in baking dish to make overlapping layers.
- 5 combine remaining ingredients and spread on top of summer squash.
- 6 bake until lightly browned, 20-25 minutes. serve hot.
