Blueberry Crisp

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 3 cups brown rice, cooked
  • 3 cups fresh blueberries (or frozen, thawed & drained)
  • 3 tablespoons brown sugar, packed
  • 1/3 cup rice bran
  • 1/4 cup whole wheat flour
  • 1/4 cup walnuts, chopped
  • 1/4 cup brown sugar, packed (yes, again!)
  • 1 teaspoon ground cinnamon
  • 3 tablespoons margarine

Recipe

  • 1 preheat oven to 375 degrees f, then coat a 2-quart baking dish with nonstick cooking spray.
  • 2 in a bowl, combine the three cups of cooked brown rice, blueberries & 3 tablespoons of brown sugar, then spoon the rice & berry mixture into prepared baking dish & set aside.
  • 3 in a bowl, combine bran, flour, walnuts, remaining 1/4 cup of brown sugar & cinnamon, then, with a pastry blender, cut in the margarine until mixture resembles coarse meal.
  • 4 sprinkle this struesel over the rice & berry mixture, & bake 15-20 minutes or until thoroughly heated.
  • 5 most tasty served warm!
