Apricot Glazed Carrots

Ingredients
- 2 lbs baby carrots
- 1 onion, chopped
- 1/2 cup water
- 1/3 cup honey
- 1/3 cup apricot preserves
- 2 tablespoons chopped fresh parsley
Recipe
- 1 place carrots and onion in slow cooker, and add the water.
- 2 cover & cook on low for 9 hours.
- 3 drain liquid from slow cooker.
- 4 in a small bowl, mix honey and preserves together, and pour over carrots.
- 5 cover and cook on high for 10-15 minutes.
- 6 sprinkle with parsley before serving.
