turkey patties

Ingredients

  • Servings: 4
  • 1 pound ground turkey
  • 1/4 cup fine dry bread crumbs
  • 1 egg
  • 2 tablespoons minced green onions
  • 1 clove garlic, minced
  • 1 teaspoon minced fresh ginger root
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 tablespoons chopped fresh parsley

  • in a large bowl, blend turkey with bread crumbs, egg, green onion, garlic, ginger and soy sauce. shape into 4 patties.
  • heat oil in a wide skillet over medium heat. cook burgers for 5 minutes on each side, or until cooked through. garnish with chopped parsley.

Wild Rice

Ingredients

  • Servings: 6
  • 1 cup uncooked wild rice
  • 1 (14 ounce) can chicken broth
  • 1/4 cup water
  • 1/2 pound andouille sausage, diced
  • 1/2 cup diced sweet onion
  • 1 cup chopped fresh mushrooms
  • 1 tablespoon minced garlic
  • 1 (10.75 ounce) can condensed cream of mushroom soup

  • in a saucepan, combine the wild rice, chicken broth, water, sausage, onion, mushrooms and garlic. bring to a boil, then reduce heat to low, cover, and simmer for 25 to 30 minutes, or until rice is tender. remove from the heat, and stir in the cream of mushroom soup. it's that easy!

Holiday Fudge

Ingredients

  • Servings: 4
  • 1 (12 fluid ounce) can evaporated milk
  • 1 1/3 cups butter
  • 4 1/2 cups white sugar
  • 1 pinch salt
  • 2 (7 ounce) jars marshmallow creme
  • 12 ounces almond buttercrunch confection, chopped
  • 2 cups semisweet chocolate chips
  • 1 pound chopped walnuts
  • 2 teaspoons vanilla extract

  • lightly butter a 9x13 inch baking dish. set aside.
  • combine milk, butter, sugar, and salt in a large heavy saucepan. bring to a boil over medium-high heat. then cook, stirring constantly, for 6 minutes.
  • combine marshmallow cream, candy bar, and chocolate chips in a large bowl. pour hot sugar syrup over mixture, stir until chocolate is melted and well blended. stir in walnuts and vanilla. pour into prepared baking dish. allow to cool before serving.

deli-style fresh broccoli salad

Ingredients

  • 12 slices bacon, diced
  • 1 head broccoli, cut into florets
  • 1/2 cup sliced green onion
  • 1 cup sweetened dried cranberries (such as craisins®)
  • dressing:
  • 1 cup mayonnaise
  • 1/2 cup honey
  • 2 tablespoons vinegar

  • cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. drain bacon on a plate lined with paper towel.
  • toss broccoli, cranberries, and green onion together in a large bowl. whisk mayonnaise, honey, and vinegar together in a small bowl. add bacon to broccoli mixture and toss. drizzle dressing over the salad; toss to coat.
  • refrigerate until cold, about 30 minutes.

Praline Cookies

  • 1/2 cup butter
  • 2/3 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon maple flavored extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup pecan halves

  • in a large bowl, cream together butter and brown sugar. beat in egg, vanilla and maple flavoring. beat in salt and flour until a smooth dough is formed. shape dough into a log 12 inches long, wrap in wax paper, and refrigerate overnight.
  • preheat oven to 350 degrees f (180 degrees c). line cookie sheet with parchment paper.
  • slice dough into 1/4 inch slices. place slices on cookie sheet. top each cookie with a pecan half. bake for 10 minutes in preheated oven, or until golden brown.

peppermint eggnog punch

Ingredients

  • Servings: 16
  • 1 quart peppermint ice cream
  • 1 quart eggnog
  • 4 (12 fluid ounce) cans or bottles ginger , chilled
  • 1 cup
  • 24 small peppermint candy canes for garnish

  • set aside 2 or 3 round scoops of ice cream in the freezer for garnish. stir remaining ice cream until softened. gradually stir in eggnog and . transfer to a punch bowl, and stir in ginger . hang candy canes around the edge of the punchbowl. float reserved ice cream scoops on top, and serve immediately.

Waffle Iron Chocolate Cookies

Ingredients

  • Servings: 2
  • 1 cup packed brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 (1 ounce) squares unsweetened chocolate
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Recipe

  • melt chocolate over low heat. cream together sugar and butter or margarine. add chocolate and mix well.
  • add eggs and dry ingredients. mix well.
  • heat waffle iorn. non stick spray can be used to prepare iron.
  • drop about 1 tablespoon of dough in each section of preheated iron.
  • bake until cookies start to turn brown. be careful because they can burn easily.
  • cool and frost with a white powdered sugar frosting. (see recipe for vanilla glaze.)
