Acorn Squash And Apple Soup

Ingredients

- 2 lbs acorn squash, halved and seeded
- 3 cups chicken stock
- 2 granny smith apples, cored, peeled and chopped
- 1/2 cup onion, chopped
- 1 cup unsweetened apple juice
- 2 teaspoons fresh gingerroot, grated
- 1/2 teaspoon salt
- 1 tablespoon fresh lemon juice
- fresh ground pepper
Recipe
- 1 place squash cut side down on rack set over gently simmering water in saucepan.
- 2 cover and steam until tender.
- 3 cool squash slightly and scoop pulp from shells.
- 4 combine 1/4 cup chicken stock, apples and onion in heavy medium saucepan.
- 5 cover and cook over low heat 10 minutes.
- 6 add squash pulp, remaining chicken stock, apple juice, ginger and salt.
- 7 cover and simmer about 20 minutes.
- 8 puree soup in batches in processor or blender.
- 9 strain through sieve into clean saucepan, pressing puree with back of spoon.
