Acorn Squash And Apple Soup

Ingredients

  • Servings: 4
  • 2 lbs acorn squash, halved and seeded
  • 3 cups chicken stock
  • 2 granny smith apples, cored, peeled and chopped
  • 1/2 cup onion, chopped
  • 1 cup unsweetened apple juice
  • 2 teaspoons fresh gingerroot, grated
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • fresh ground pepper

Recipe

  • 1 place squash cut side down on rack set over gently simmering water in saucepan.
  • 2 cover and steam until tender.
  • 3 cool squash slightly and scoop pulp from shells.
  • 4 combine 1/4 cup chicken stock, apples and onion in heavy medium saucepan.
  • 5 cover and cook over low heat 10 minutes.
  • 6 add squash pulp, remaining chicken stock, apple juice, ginger and salt.
  • 7 cover and simmer about 20 minutes.
  • 8 puree soup in batches in processor or blender.
  • 9 strain through sieve into clean saucepan, pressing puree with back of spoon.
  • 10 reheat soup gently. a.
  • 11 dd lemon juice.
  • 12 season with salt and generous amount of pepper.
  • 13 ladle into bowls and garnish with yogurt and chives.
