Baked Beans Rice And Chicken

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • nonstick cooking spray or 2 tablespoons corn oil
  • 6 boneless skinless chicken breast halves, cut into strips (seasoned with salt and pepper)
  • 1 cup uncooked long grain rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 garlic cloves, chopped
  • 2 cups chicken broth or 2 cups water
  • 1 (14 ounce) can stewed tomatoes
  • 1 (16 ounce) can baked beans

Recipe

  • 1 in a saucepan, heat oil over medium heat.
  • 2 add chicken; stir and cook until browned.
  • 3 set aside.
  • 4 add rice, onions, bell pepper and garlic in same saucepan; stir and cook 2 minutes.
  • 5 combine all ingredients into a large bowl; mix well.
  • 6 spoon mixture into a greased 13x9x2 inch glass baking dish.
  • 7 cover with foil.
  • 8 bake 50 minutes or until rice is cooked.
