Baked Beans Rice And Chicken

Ingredients
- Servings: 6
- nonstick cooking spray or 2 tablespoons corn oil
- 6 boneless skinless chicken breast halves, cut into strips (seasoned with salt and pepper)
- 1 cup uncooked long grain rice
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 2 garlic cloves, chopped
- 2 cups chicken broth or 2 cups water
- 1 (14 ounce) can stewed tomatoes
- 1 (16 ounce) can baked beans
Recipe
- 1 in a saucepan, heat oil over medium heat.
- 2 add chicken; stir and cook until browned.
- 3 set aside.
- 4 add rice, onions, bell pepper and garlic in same saucepan; stir and cook 2 minutes.
- 5 combine all ingredients into a large bowl; mix well.
- 6 spoon mixture into a greased 13x9x2 inch glass baking dish.
- 7 cover with foil.
- 8 bake 50 minutes or until rice is cooked.
