Banana Cocoa Brownies

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 cup quick-cooking oats
  • 1 cup boiling water
  • 4 egg whites
  • 1 1/2 cups mashed ripe bananas (about 3 medium bananas)
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Recipe

  • 1 preheat over to 350.
  • 2 in a bowl, combine oats and boiling water. let stand for 5 minutes.
  • 3 in a separate bowl, beat egg whites, bananas, sugars, oil and vanilla until well-blended.
  • 4 combine dry ingredients; gradually add to creamed mixture.
  • 5 add in the oats to the mixture.
  • 6 spread into a 13 x 9 x 2-inch pan coated with cooking spray.
  • 7 bake for 20-25 minutes, or until toothpick inserted in centre comes out clean.
  • 8 cool on a wire rack.
  • 9 enjoy!
