Banana Cocoa Brownies

Ingredients
- 1 cup quick-cooking oats
- 1 cup boiling water
- 4 egg whites
- 1 1/2 cups mashed ripe bananas (about 3 medium bananas)
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/4 cup baking cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Recipe
- 1 preheat over to 350.
- 2 in a bowl, combine oats and boiling water. let stand for 5 minutes.
- 3 in a separate bowl, beat egg whites, bananas, sugars, oil and vanilla until well-blended.
- 4 combine dry ingredients; gradually add to creamed mixture.
- 5 add in the oats to the mixture.
- 6 spread into a 13 x 9 x 2-inch pan coated with cooking spray.
- 7 bake for 20-25 minutes, or until toothpick inserted in centre comes out clean.
- 8 cool on a wire rack.
- 9 enjoy!
