Mediterranean Three Bean Salad

Ingredients

  • Servings: 8
  • 1 (15 ounce) can cannellini (white kidney) beans, rinsed and drained
  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 1 (15 ounce) can dark red kidney beans, rinsed and drained
  • 1/2 onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons minced fresh parsley, or to taste
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • salt and ground black pepper to taste

  • combine cannellini beans, garbanzo beans, kidney beans in a mixing bowl. add onion, garlic, parsley, olive oil, lemon juice, salt, and black pepper; mix well.
