Acadia's Eggplant And Pepper W/velveeta

Ingredients
- Servings: 4
- 2 small eggplants (chopped)
- 1 red bell pepper (chopped)
- 1 large vidalia onion (or any sweet onion)
- 1 tablespoon margarine
- 1/8 teaspoon kosher salt
- 1 slice velveeta cheese (singles)
Recipe
- 1 chop onion into 1/4" pieces.
- 2 in skillet add 1 tablespoon of margarine.
- 3 on low heat saute onion until translucent.
- 4 add bell pepper and eggplant pieces with onion.
- 5 sprinkle salt over mixture.
- 6 stir.
- 7 saute until tender.
- 8 add velveeta cheese by placing cheese on top of mixture.
- 9 when it melts, stir the whole mixture together so cheese coats vegetables.
- 10 enjoy.
