Apple Cinnamon Whole Wheat Muffins

Total Time: 55 mins Preparation Time: 35 mins Cook Time: 20 mins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 cups shredded apples
  • 1/2 cup shredded carrot
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 2 teaspoons vanilla extract
  • 2 eggs

Recipe

  • 1 heat oven to 350 degrees.
  • 2 line 12 muffin cups or spray with nonstick spray.
  • 3 combine flours, sugar, baking soda, cinnamon, and salt in a bowl.
  • 4 add apples, carrots, raisins, walnuts and coconut, and mix well.
  • 5 add oil, milk, vanilla, and eggs.
  • 6 stir just until combined!
  • 7 fill muffin cups 3/4 full.
  • 8 bake 20-25 minutes or until they test done.
