Apple Cinnamon Whole Wheat Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 cups shredded apples
- 1/2 cup shredded carrot
- 1/2 cup raisins
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts
- 1/4 cup oil
- 1/4 cup unsweetened applesauce
- 1/4 cup milk
- 2 teaspoons vanilla extract
- 2 eggs
Recipe
- 1 heat oven to 350 degrees.
- 2 line 12 muffin cups or spray with nonstick spray.
- 3 combine flours, sugar, baking soda, cinnamon, and salt in a bowl.
- 4 add apples, carrots, raisins, walnuts and coconut, and mix well.
- 5 add oil, milk, vanilla, and eggs.
- 6 stir just until combined!
- 7 fill muffin cups 3/4 full.
- 8 bake 20-25 minutes or until they test done.
