Baked Apple Oatmeal

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 2 cups chopped unpeeled apples (2 medium) or 2 cups pears (2 medium)
  • 2 2/3 cups old fashioned oats
  • 1/2 cup raisins
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 4 cups soymilk (regular or vanilla)
  • 1/4 cup real maple syrup
  • additional soymilk (optional) or milk, if desired (optional)
  • chopped toasted walnuts, if desired (optional)

Recipe

  • 1 heat oven to 350°f
  • 2 spray 2-quart casserole with cooking spray.
  • 3 in casserole, stir together apples, oats, raisins, cinnamon, salt, soymilk and syrup.
  • 4 bake uncovered 45 to 50 minutes or until most of liquid is absorbed.
  • 5 pour additional soymilk over each serving; sprinkle with walnuts.
