Baked Basmati Rice

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 1/2 cups basmati rice
  • 1 cup water
  • 2 tablespoons butter
  • 2 packets oxo instant chicken bouillon or 4 -6 tablespoons instant chicken stock
  • 1/2 cup chopped onion (i use pre-chopped frozen)
  • 1 cup frozen corn

Recipe

  • 1 grease a 9 x 13 baking pan with the olive oil.
  • 2 pour in rice then cover with dry chicken stock.
  • 3 pour water on top.
  • 4 add onion and corn and stir.
  • 5 place butter chunks in various spots around the dish.
  • 6 cover with aluminum foil and bake at 350.
  • 7 stir every once in a while so rice on bottom does not burn and rice is evenly crispy on top.
