Banana Chutney

Ingredients
- 5 ripe bananas, peeled and sliced
- 5 1/2 ounces cider vinegar
- 3 1/2 ounces superfine sugar
- 1 teaspoon molasses
- 1/2 large onion, finely chopped
- 1 1/4 ounces sultanas
- 1 teaspoon fresh minced ginger
- 1/2 tablespoon curry powder
- 1/2 teaspoon allspice
Recipe
- 1 cook bananas and vinegar over medium heat until soft and bubbly. add the sugar, molasses. stir until sugar is dissolved. cool to room temperature.
- 2 mix remaining ingredients into banana mixture.
- 3 cover and chill at least 18 hours. check the seasoning.
- 4 spoon into sterilized jars. do not use metal lids. seal as you would jam and store in refrigerator.
