Banana Chutney

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 5 ripe bananas, peeled and sliced
  • 5 1/2 ounces cider vinegar
  • 3 1/2 ounces superfine sugar
  • 1 teaspoon molasses
  • 1/2 large onion, finely chopped
  • 1 1/4 ounces sultanas
  • 1 teaspoon fresh minced ginger
  • 1/2 tablespoon curry powder
  • 1/2 teaspoon allspice

Recipe

  • 1 cook bananas and vinegar over medium heat until soft and bubbly. add the sugar, molasses. stir until sugar is dissolved. cool to room temperature.
  • 2 mix remaining ingredients into banana mixture.
  • 3 cover and chill at least 18 hours. check the seasoning.
  • 4 spoon into sterilized jars. do not use metal lids. seal as you would jam and store in refrigerator.
