Acorn Squash Soup

Ingredients

  • Servings: 4
  • 2 cups chicken broth
  • 2 medium acorn squash, peeled and cubed
  • 1/2 cup chopped onion
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/2 cup milk
  • 1 tablespoon cider vinegar
  • salt and pepper

Recipe

  • 1 combine all ingredients except milk, vinegar, salt and pepper in slow cooker.
  • 2 cook on high for 3-4 hours.
  • 3 process soup in food processor or blender until smooth, adding milk, salt and vinegar. season to taste with salt and pepper.
