Andagi (okinawan Doughnuts)

Ingredients

  • 3 cups flour
  • 1 cup buttermilk baking mix
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 tablespoon grated orange rind
  • 1/2 cup orange juice
  • 3/4 cup milk
  • oil (for deep frying)

Recipe

  • 1 in a large mixing bowl, sift flour with baking mix, sugar, baking powder and salt. add eggs, orange rind, juice and milk; stir until dry ingredients are moistened and dough is smooth.
  • 2 heat oil to 375°f.
  • 3 drop dough by teaspoonfuls into hot oil; fry until golden brown. drain on paper towels.
