Andagi (okinawan Doughnuts)

Ingredients
- 3 cups flour
- 1 cup buttermilk baking mix
- 3/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 tablespoon grated orange rind
- 1/2 cup orange juice
- 3/4 cup milk
- oil (for deep frying)
Recipe
- 1 in a large mixing bowl, sift flour with baking mix, sugar, baking powder and salt. add eggs, orange rind, juice and milk; stir until dry ingredients are moistened and dough is smooth.
- 2 heat oil to 375°f.
- 3 drop dough by teaspoonfuls into hot oil; fry until golden brown. drain on paper towels.
