Another Swedish Pepparkakor

Total Time: 1 hr 5 mins Preparation Time: 1 hr Cook Time: 5 mins

Ingredients

  • 3 1/2 cups unsifted flour
  • 1/2 cup softened margarine
  • 3/4 cup granulated sugar
  • 3/4 cup light molasses
  • 1 teaspoon grated lemon, rind of
  • 1 teaspoon ground cloves
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Recipe

  • 1 sift dry ingredients together.
  • 2 mix in large bowl high speed butter, sugar& egg until light& fluffy.
  • 3 add molasses& lemon peel.
  • 4 beat until well blended.
  • 5 stir in flour mix.
  • 6 wrap in wax paper& refrigerate overnight.
  • 7 roll out 1/8" thick& cut with cookie cutters.
  • 8 bake 375 on lightly greased baking sheet.
