Black Bean Quesadilla

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 (19 ounce) can black beans, drained and washed
  • 1/2 cup salsa
  • 1 cup cheddar cheese
  • 1 tablespoon chopped coriander (cilantro)
  • 1/4 chopped green onion
  • salsa
  • sour cream

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 puree black beans and salsa together.
  • 3 add coriander and green onions to mixture.
  • 4 mix well (this filling can be made ahead of time and refrigerated).
  • 5 divide evenly in bowl into 1/6's.
  • 6 spread over tortillas.
  • 7 sprinkle with cheese.
  • 8 fold tortilla in half
  • 9 place on baking sheet so they aren't overlapping too much.
  • 10 bake for 5 minutes and then flip over for another 4-5 minutes.
  • 11 serve with salsa and sour cream.
