Black Bean Quesadilla

Ingredients
- 1 (19 ounce) can black beans, drained and washed
- 1/2 cup salsa
- 1 cup cheddar cheese
- 1 tablespoon chopped coriander (cilantro)
- 1/4 chopped green onion
- salsa
- sour cream
Recipe
- 1 preheat oven to 400 degrees.
- 2 puree black beans and salsa together.
- 3 add coriander and green onions to mixture.
- 4 mix well (this filling can be made ahead of time and refrigerated).
- 5 divide evenly in bowl into 1/6's.
- 6 spread over tortillas.
- 7 sprinkle with cheese.
- 8 fold tortilla in half
- 9 place on baking sheet so they aren't overlapping too much.
- 10 bake for 5 minutes and then flip over for another 4-5 minutes.
- 11 serve with salsa and sour cream.
