Black Bean Salsa

Ingredients

  • Servings: 1
  • 2 (15 ounce) cans black beans, drained and rinsed well
  • 1 (10 ounce) bag frozen corn
  • 1/2 cup diced red peppers or 1/2 cup green pepper
  • 1 large tomato, seeded and diced
  • 1 cup diced onion (i used a red onion)
  • 2 tablespoons fresh cilantro, minced
  • 2 teaspoons minced garlic
  • 2 teaspoons cumin
  • 1 tablespoon chili powder
  • 3 teaspoons lime juice
  • 3 tablespoons olive oil
  • salt, to taste

Recipe

  • 1 combine all the ingredients in a bowl and chill.
  • 2 it gets better as it's chilled in the refrigerator.
