Baked Cauliflower With Italian Seasoning

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 head cauliflower, outer leaves removed
  • 4 tablespoons margarine
  • 1/4 cup italian seasoned breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon dried basil
  • 1 pinch oregano

Recipe

  • 1 cut the bottom of the stem off of the head of cauliflower. do not break apart the florets.
  • 2 cut an x in the bottom stem.
  • 3 steam the cauliflower for 10 minutes, turn over and steam for another 5 to 10 minutes, until it is fork tender.
  • 4 place the cauliflower in a baking dish.
  • 5 melt the margarine and mix in the bread crumbs, garlic powder, basil and oregano.
  • 6 spoon the breadcrumb mixture over the top and sides of the cauliflower.
  • 7 bake in a 350 degree oven for 10 - 12 minutes until the breadcrumbs are golden.

Asparagus With Lemon Caper Vinaigrette

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb asparagus
  • 1 tablespoon salt
  • 1 medium lemon, juice of, divided
  • 1 tablespoon capers, drained and chopped
  • 2 teaspoons dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil

Recipe

  • 1 trim ends of asparagus and place spears in a large skillet.
  • 2 cover asparagus with water and add salt and 1 tbsp lemon juice.
  • 3 bring to a boil, then reduce heat to simmer about 7 minutes until crisp-tender.
  • 4 remove from heat and run under cold water to stop cooking.
  • 5 prepare vinaigrette:.
  • 6 combine remaining lemon juice, capers, mustard, sugar, and pepper. (capers may be chopped or left whole, it's up to you. i usually chop them up a little.).
  • 7 slowly drizzle in oil while whisking rapidly, allowing vinaigrette to thicken slightly.
  • 8 toss asparagus with vinaigrette and serve.
  • 9 may be refrigerated and served within a couple hours, or served warm immediately.

Bbq-style Chili (vegan)

Ingredients

  • 2 cups veggie crumbles (mince meat substitution)
  • 1 (28 ounce) can tomato sauce
  • 3 garlic cloves, minced
  • 2 red bell peppers, grated
  • 1 orange bell pepper, grated
  • 1 cup water
  • 1/2 cup hickory flavored barbecue sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon marmite (adds "meaty" flavor) (optional) or 1 tablespoon vegemite (adds "meaty" flavor) (optional)
  • 1 1/2 tablespoons paprika
  • 1 -2 teaspoon chili powder
  • 1 teaspoon raw sugar
  • 1 teaspoon onion powder
  • 1/4 teaspoon ground coriander (cilantro)
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon cumin
  • 2 (15 ounce) chili beans (kidney beans)

Recipe

  • 1 combine everything except beans in a cooking pot. bring to a boil, lower heat and let simmer about 30 minutes. (stir occasionally).
  • 2 taste, add more spices if needed.
  • 3 add beans (one with liquid, one drained). let simmer additionally 30 minute. enjoy!

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 egg whites
  • 1 cup mashed banana
  • 1/4 cup applesauce
  • cream cheese (optional)

Recipe

  • 1 preheat oven to 350.
  • 2 mix together the flour, sugar, baking powder baking soda and cinnamin.
  • 3 add egg whites mix well.
  • 4 last add the banana's and applesauce.
  • 5 place in a loaf pan and bake for 50-55 min.
  • 6 when cool you may add softend cream cheese as a frosting.

  • 1 lb round steak, cubed
  • 1 green bell pepper, seeded and cut into chunks
  • 1 onion, cut into chunks
  • 8 ounces cherry tomatoes
  • 1 (4 ounce) jar marinated artichoke hearts
  • 1 carrot, sliced
  • 1 (4 ounce) can pineapple chunks
  • 1 green onion, sliced
  • 1/4 cup chicken broth
  • 3/4 cup prepared barbecue sauce
  • 2 tablespoons coffee liqueur
  • 1 green chili pepper, seeded and chopped
  • 1 garlic clove, crushed
  • 1/4 teaspoon prepared horseradish
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground pepper
  • hot cooked rice, for accompaniment

Recipe

  • 1 skewer cubed round steak, green bell pepper, onion, cherry tomatoes, artichoke hearts (drained, reserving the marinade), sliced carrot, pineapple chunks, and sliced green onion onto short bamboo skewers.
  • 2 in a bowl, combine the reserved artichoke hearts marinade, chicken broth, prepared barbecue sauce, coffee liqueur, chopped green chili pepper, crushed garlic clove, horseradish, salt, and pepper.
  • 3 pour the sauce over the skewered mixture and marinate for 1 hour.
  • 4 grill the marinated skewered mixture, basting and turning until done.
  • 5 serve with the cooked rice.

  • 3 very ripe bananas
  • 1/2 cup honey
  • 3 tablespoons canola oil, plus a little more for oiling the loaf pan

  • 1/4 teaspoon salt
  • 3/4 cup chopped walnuts or 3/4 cup pecans

Recipe

  • 1 heat the oven to 350 degrees. lightly oil a loaf pan.
  • 2 mash the bananas and mix with the honey, canola oil and vanilla extract.
  • 3 stir together the whole wheat pastry flour, baking soda and salt. add the nuts.
  • 4 blend the two mixtures and spoon into a lightly oiled loaf pan. bake for 40 minutes, or until center is set.

  • 1 mix all ingredients together in a large bowl until blended (you can mix in blender or food processor for a finer texture if desired).
  • 2 store in air tight container.
  • 3 to serve: mix 6 tablespoons mix with 1 cup hot water until mix is dezolved. top with marshmallows if desired.

Banana Bread

Ingredients

  • 5 bananas (very ripe)
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup oil
  • 1 egg
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Recipe

  • 1 mash up bananas, mix in sugar and oil.
  • 2 add sieved flour and mix it and the rest of the main ingredients together.
  • 3 pour into a well-greased 2-pound bread loaf tin, sprinkle topping on top.
  • 4 place bread tin into a casserole dish with a cup of water in it, and bake at 325f for 40 minutes.
  • 5 remove from oven, put foil over the loaf, and bake for another 40 minutes.

Bistro Garden Butternut Squash Soup

Ingredients

  • Servings: 8
  • 2 small butternut squash
  • 2 tablespoons butter
  • 1 leek, part only,sliced
  • 4 cups chicken stock
  • 1 tablespoon sugar
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon ground cumin
  • salt
  • freshly-ground pepper
  • 1/4 cup hot whipping cream

Recipe

  • 1 cut squash in halves.
  • 2 clean and roast at 450 degrees until very tender, about 1 hour.
  • 3 scoop out flesh with spoon and set aside.
  • 4 in large soup pot, saute onions in 1 tablespoon butter over medium heat until tender.
  • 5 add leek and squash and cook 5 minutes.
  • 6 add chicken stock, sugar, curry powder, cumin, salt and pepper to taste.
  • 7 place soup mixture in blender, a batch at a time, blending until smooth, and return to pot.
  • 8 blend last batch with 1 tablespoon butter and cream.
  • 9 return to remaining soup, stirring, and heat through.
  • 10 adjust seasoning and thickness.

Another Easy Pizza Sauce

  • 1 (14 ounce) can whole tomatoes or 1 (14 ounce) can plum tomatoes
  • 2 tablespoons good quality olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes

  • 1/2 teaspoon dried basil

Recipe

  • 1 crush the tomatoes well.
  • 2 do not drain.
  • 3 stir in the rest of the ingredients.
  • 4 sauce can be made a day in advance and refrigerated.
  • 5 i usually make it in the morning and let it sit.
  • 6 this is enough sauce for 3-4 pizzas, depending on how saucy you like it!

Asparagus Tomato Stir Fry

Ingredients

  • Servings: 4
  • 3/4 lb asparagus spear
  • 1/4 cup chicken broth
  • 2 teaspoons soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon cooking oil
  • 1/2 teaspoon grated gingerroot
  • 4 green onions, bias sliced into 1 inch lengths
  • 1 1/2 cups fresh mushrooms, sliced
  • 2 small tomatoes, cut into thin wedges (about 1 cup)

Recipe

  • 1 snap off and discard woody bases from asparagus. bias slice into 1 inch pieces.
  • 2 for sauce, combine chicken broth, soy sauce and cornstarch; set aside.
  • 3 preheat a wok or large skillet over high heat; add oil.
  • 4 stir fry the gingerroot in hot oil for 30 seconds.
  • 5 add asparagus and green onions; stir fry for 3 minutes.
  • 6 add mushrooms; stir fry about 1 minute more until vegetables are crisp tender.
  • 7 push vegetables from center of wok; stir sauce; add to center of wok.
  • 8 cook and stir until thickened and bubbly.
  • 9 add tomatoes; heat through.
  • 10 serve at once. serve with rice if desired.

Abby's French Bread Braids

Ingredients

  • 4 3/4-5 3/4 cups flour
  • 1 tablespoon sugar
  • 3 teaspoons salt
  • 2 (14 1/2 ounce) packages dry yeast
  • 2 cups water
  • 2 tablespoons shortening
  • 1 tablespoon water
  • 1 egg

Recipe

  • 1 in a bowl combine 3 cups flour, sugar, salt and yeast, mix well.
  • 2 in a small sauce pan heat 2 cups water and shortening until very warm.
  • 3 add warm mixture to flour mixture, blend on low speed until moistened and then for 3 min on medium speed.
  • 4 by hand stir in an additional 1 1/2 - 2 1/4 cups flour to form a stiff dough.
  • 5 on a floured surface, knead 1/4 - 1/2 cup flour until dough is smooth and elastic, about 8 minute.
  • 6 place in a greased bowl, cover loosely with greased plastic wrap and a cloth towel. let rise in a warm place until light and doubled in size, about 45-60 min.
  • 7 grease a large cookie sheet. punch the dough down several times to remove all air bubbles. divide the dough in half and then divide each half into 3 equal parts.
  • 8 roll each part into a 14 inch rope. braid the 3 ropes, sealing the ends. place on greased cookie sheet. repeat with other dough half.
  • 9 in a small bowl combine 1 tbsp water and the egg , beat slightly. carefully brush over the loaves. cover, let rise in a warm place until light and doubled in size, 20-30 minute.
  • 10 heat over to 375. uncover the loaves, brush again with egg mixture. bake for 25-30 min or until golden brown.
  • 11 remove from oven and cool on wire racks.

Asparagus Risotto - Ristorante Da Mino, Pavia Province, Italy

  • 1 1/4 lbs asparagus, trimmed
  • 2 cups low sodium chicken broth
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 cups chopped onions
  • 1 1/2 cups arborio rice
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons butter
  • 1/4 cup shaved parmesan cheese

Recipe

  • 1 bring 5 cups salted water to boil in large saucepan. add asparagus and cook until crisp-tender, about 4 minutes. using tongs, transfer asparagus to bowl of ice water; cool. drain (reserving 3 1/2 cups cooking liquid in saucepan). cut off asparagus tips; reserve. cut stalks into 1/4-inch thick rounds.
  • 2 in saucepan, combine reserved cooking iquid and broth . bring to simmer. reduce heat to low.
  • 3 heat oil in large saucepan over medium heat. add onion; saute until translucent, about 5 minutes. add rice; stir 2 minutes. add 3/4 cup hot liquid. simmer until liquid is absorbed, stirring often. add asparagus rounds. cook until rice is just tender and risotto is creamy, adding liquid 3/4 cup at a time, stirring often and allowing each addition to be absorved before adding next, about 20 minutes.
  • 4 mix reserved asparagus tips, grated cheese and butter into rice. season to taste with salt and pepper. top with shaved cheese.

Bean And Rice Casserole With A Kick

  • 1 1/2 cups brown rice, uncooked
  • 2 (15 ounce) cans black beans
  • 3 cloves garlic, minced fine

  • 1 1/2 cups shredded reduced-fat monterey jack cheese or 1 1/2 cups monterey jack pepper cheese

  • 1 cook brown rice (simmering on low heat for 1 hour in 3 cups water).
  • 2 mix remaining ingredients in a bowl.
  • 3 add cooked brown rice to bowl; mix well.
  • 4 put mixture into a large casserole dish, and bake at 350 degrees for 45 minutes; cover for last 10 minutes.

Bean Burrito Bake

Ingredients

  • 1 (15 ounce) can kidney beans (cannellini)
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can sweet corn (not cream style)
  • 1 (15 ounce) can diced peeled tomatoes
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon cumin seed
  • 1 teaspoon onion powder
  • 1/2 cup monterey jack cheese
  • 1 1/2 cups instant rice
  • 4 ounces fat free sour cream

Recipe

  • 1 preheat oven to 350°f.
  • 2 to 2 quart baking dish add the black beas,kidney beans, corn, tomatoes. (drain all except the tomatoes.).
  • 3 sprinkle over the top all of the spices. then add the cheese and rice.
  • 4 mix well so the rice is dampened by the tomato juices.
  • 5 cover and bake for 20 minutes.
  • 6 remove from oven and add 4 oz fat free sour cream. mix so it is evenly distributed through the dish.
  • 7 return to oven and bake 10 more minutes.
  • 8 allow to cool only briefly before serving unless you intend to use as a dip. in this case serve it warm but not hot.

  • 1 (14 1/2 ounce) can chicken broth
  • 1 1/2 cups uncooked spiral pasta
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 1/2 cups frozen corn
  • 1 cup cubed cooked ham
  • 1/4 teaspoon dried thyme
  • salt and pepper
  • 1 dash ground cumin
  • 1/4 cup shredded parmesan cheese

Recipe

  • 1 in a large saucepan, bring broth to a boil. add the pasta; cook, uncovered, for 10 minutes or until tender. do not drain.
  • 2 stir in the beans, corn, ham and seasonings; heat through. sprinkle with cheese.
  • 3 if you like, you can thicken the juices with cornstarch to make a sauce.

  • 2/3 cup nonfat yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon sesame oil
  • 4 tablespoons chopped parsley or 4 tablespoons cilantro
  • 1/4 cup chopped walnuts, toasted if desired

Recipe

  • 1 steam or microwave asparagus until just tender, cool.
  • 2 whisk yogurt with lemon juice and sesame oil.
  • 3 stir in parsley or cilantro.
  • 4 add salt and pepper if desired.
  • 5 serve asparagus with the dressing.
  • 6 sprinkle walnuts on top.

Aalo Paratha

Ingredients

  • 2 1/4 cups whole wheat flour
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 3 large potatoes
  • 3/4 cup onion, finely chopped
  • 3 tablespoons fresh coriander leaves, finely chopped (cilantro)
  • 1 1/2 tablespoons cumin powder
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon garam masala
  • 1/4 teaspoon red pepper powder (to taste)
  • 3 tablespoons oil

Recipe

  • 1 to form the paratha by dividing the dough into 9 equal parts.
  • 2 roll out each part until about 10" wide and 1/4" thick.
  • 3 . place about 1/4 cup of the filling in the center, and gather the dough circle up around the filling, drawing the dough up to a sealed point at the top. fold over the point and flatten the dough into a thick patty.
  • 4 roll out carefully until about 1/4 inch thick and 6 1/2" wide. to sauté the paratha, preheat a frying pan on medium-high heat.
  • 5 add 1 teaspoon oil for the first paratha only.
  • 6 put in one paratha and paint the top surface with about 1/4 teaspoon oil. flip and paint the second side.
  • 7 continue to flip the paratha frequently, pressing with a spatula on any unbrowned areas until browned all over on both sides.
  • 8 remove from the pan and repeat with the other parathas until all are cooked.

Bean And Sesame Seed Spread (easy Hummus)

  • 1/2 cup sesame seeds
  • 1 garlic clove, cut in half
  • 2 tablespoons lemon juice

  • 1 place reserved bean liquid, the sesame seed and garlic in food processor. cover and blend on high speed until mixed.
  • 2 add the beans, lemon juice and salt. cover and process on high speed, stopping occasionally to scrape sides, if necessary, until smooth.
  • 3 serve as a spread with wedges of pita bread, crackers or raw vegetables.

  • 2 in a separate bowl, mix apple sauce, sugar and eggs. mix in milk and bananas. pour into dry ingredients until moistened. ignore lumps. fill muffin pans 3/4 full. bake 400f for 20-25 minutes.

A1 Ultimate Guacamole

  • 4 large ripe avocados
  • 1/4 small onion, very finely chopped
  • 1 large tomato, very finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vinegar from a jar pickled jalapeno peppers

Recipe

  • 1 mash everything together roughly and serve with plain or chilli flavoured tortilla chips. better still, find my 'kick ass nacho' recipe and serve as part of that.

  • 2 slightly beaten egg whites
  • 1 cup mashed banana
  • 3/4 cup sugar
  • 1/4 cup cooking oil

Recipe

  • 1 1. spray an 8x4x2 inch loaf pan with nonstick coating. set aside. in a medium bowl stir together the flour, baking powder, baking soda, cinnamon, and salt. set aside.
  • 2 2. in a large mixing bowl stir together the egg whites, banana, sugar, and oil. add flour mixture all at once to banana mixture. stir just until moist.
  • 3 3. spread batter in prepared pan. bake in a 350 oven for 45-50 minutes or until a toothpick inserted near the center comes out clean.
  • 4 4. cool the bread in the pan on a wire rack for 10 minutes. remove from pan; cool completely on rack.wrap bread in foil or plastic wrap; store overnight. makes 1 loaf.

Another Chicago Hot Relish

Ingredients

  • 20 ripe tomatoes, peeled and cored
  • 7 yellow onions, finely chopped
  • 6 green bell peppers, finely chopped
  • 6 cups celery, finely chopped
  • 12 hot peppers, with seeds, finely chopped
  • 5 1/2 cups sugar (may reduce sugar by no more than1 cup)
  • 3 cups vinegar
  • 2 tablespoons salt

Recipe

  • 1 pulse and chop tomatoes, onions, bell peppers, celery, and hot peppers in a food processor.
  • 2 pour mixture into large non-reactive pot.
  • 3 add sugar, vinegar and salt, mix together.
  • 4 bring mixture to a boil; reduce heat immediately.
  • 5 simmer until mixture is thick, dark and glossy; this may take a few hours. pour mixture into 14 to 16, 8 ounce, washed, sterile, hot jars, about 1/4 inch from top of jar.
  • 6 top cleaned rim of jars with hot sterile lids.

Banana Bread

  • 1 preheat oven to 375°f
  • 2 spray 8½ x 4½-inch loaf pan with nonstick cooking spray.
  • 3 in large bowl, combine flour, baking powder, baking soda and allspice.
  • 4 in medium bowl, whisk together bananas, sugar, apple sauce, egg whites, oil and vanilla.
  • 5 bake 60 minutes or until toothpick inserted into center comes out clean.

Another Mint Chutney

  • 125 g fresh mint sprigs
  • 3 fresh green chilies, seeded and chopped
  • 3 green onions, chopped
  • 4 teaspoons vinegar
  • 2 teaspoons sugar

  • 1 remove the mint leaves from the stalks.
  • 2 wash and dry and place in a food processor with remaining ingredients.
  • 3 process until smooth.
  • 4 transfer mixture into warm sterilised jar.
  • 5 seal and label when cold.
  • 6 store in the refrigerator until required.
  • 7 note: it will last for a week in the fridge and is delicious with lamb or an indian meal.

Asparagus Risotto

  • 1 teaspoon butter
  • 7 ounces risotto rice
  • 3 cups chicken stock or 3 cups vegetable stock, heated
  • 7 ounces asparagus, diagonally sliced
  • 1 small onion, finely chopped
  • 1/4 cup wine
  • salt and pepper

Recipe

  • 1 heat the butter in a large saucepan and fry the onion for two minutes. add the asparagus and cook for a further three minutes.
  • 2 add the risotto rice and stir continuously for two minutes.
  • 3 add the wine and stir until it has been absorbed. then add a ladle of stock and stir until almost absorbed.
  • 4 keep ladling in the stock and stirring continuously until it has almost all been absorbed and the rice is tender (about twenty minutes).
  • 5 season with salt and pepper and stir in a little more butter if you want a creamier texture. serve warm.

Abm Favorite Sourdough Bread

  • 3 1/2 cups bread flour
  • 2 tablespoons raw honey
  • 2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup nonfat milk, warmed
  • 1 1/2 tablespoons butter, softened
  • 1 cup sourdough bread, starer

Recipe

  • 1 get all of the ingredients together and have them near your bread machine, with the container in the machine.
  • 2 add 1 cup flour, honey, salt, and yeast to bread pan. start basic bread cycle with dark crust to begin mixing these things together.
  • 3 slowly add warmed milk and butter while the bread machine is stirring. i have also used whey left over from my crockpot yogurt and it's turned out awe-some!
  • 4 add the sourdough the same way; slowly while it mixes.
  • 5 add the remaining flour to the wet mixture. the dough will get very crumbly and might seem too dry. help this out by pressing down on the dough during kneading to get it to incorporate all dough bits.
  • 6 close the top and let it finish its cycle. take it out immediately so it doesn't get soggy,.
  • 7 alternatively use dough only and then let it raise overnight and bake in the oven at 375 for 30 minutes. if you give it a "cold rise" it turns out even more awesome!

Bean And Sausage Soup

Ingredients

  • 1 (1 lb) package kielbasa (more if you are making for a large group)
  • 1/2 onion, diced
  • 2 (14 ounce) cans stewed tomatoes
  • 1 (11 ounce) can rotel
  • 3 (14 ounce) cans black-eyed peas

Recipe

  • 1 slice the links in half and then cut into pieces (moon shaped - about a 1/2 inch thick)
  • 2 brown the links with the onion. you can add a small amount of oil if necessary.
  • 3 add the stewed tomatoes ( often needs more chopping) and blackeyed peas. do not drain the peas. you can mix it up by changing the peas to kidney beans or great northern beans, or any beans really - or a combination of all. just make sure to have 3 cans. and do not drain.
  • 4 if you want to add more spices now is the time. although i don't believe it's needed.
  • 5 cook for about 20 minutes until flavors blend.
  • 6 serve.

Baked Chick Peas (garbanzos)

  • 6 stir in lemon juice; season to taste with salt and pepper.

  • 2 this recipe makes 4 mini loaves (i love the pampered chef mini loaf pan that's a baking stone). you could also pour the mixture into a mini muffin pan. if you do the mini muffins, they only need about 10 minutes in the oven. or you could do one large loaf of banana bread and that would take about an hour to bake.

Asparagus Roll-ups

Recipe

  • 2 cut phyllo dough sheets into thirds (you need one cut sheet per asparagus spear).
  • 3 lie the dough flat and brush melted better on it.
  • 4 place one asparagus spear at one end leaving the ends of the asparagus exposed and roll it up.
  • 5 place 'asparagus roll-up' on a cookie sheet (i line the sheet w/foil for easy clean-up).
  • 6 repeat w/remaining asparagus.
  • 7 brush roll-ups w/melted butter.
  • 8 sprinkle the roll-ups w/parmesan cheese.
  • 9 bake in a 375°f oven for 10 minutes.

Abc Soup

  • 2 cups chicken broth (i use 2 bullion cubes and 2 c water) or 2 cups vegetable broth (i use 2 boullion cubes and 2 cups water)

  • 1 1/2 cups frozen mixed vegetables, thawed

  • 5 dice spanish onion and lay it over the tomatoes.

  • 1 -clean the tomatoes.
  • 2 -fill large pot with water, bring to a boil.
  • 3 -fill large bowl with cold water.
  • 4 -place some tomatoes into the boiling water.
  • 5 -stir them around 1-3 minutes, until you start to see the skin peel. (even if the skin is not peeling pull them from the hot water).
  • 6 -place all tomatoes in the bowl of cold water, let them cool.
  • 7 -take a knife and gouge out the stem, both ends.
  • 8 -pull off the skin of the tomato, remove the seeds if you would like.

Bbscewed Hic Hic Honey Lemon Chicken

  • 1/3 cup scotch
  • 8 boneless skinless chicken breasts, each cut into 3 pieces horizontally, tendons removed (leaving you with 24 pieces)
  • 3 garlic cloves
  • 1/2 cup lite olive oil or 1/2 cup vegetable oil
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 3/4 teaspoon salt (or less)
  • pepper
  • 2 large lemons, scored and sliced
  • 24 large mushrooms, cleaned, stems removed
  • 12 large green onions, cleaned, parts only cut into 2 inch pieces
  • 2 large green peppers, seeded, cut into 2 inch squares
  • 2 large red peppers, seeded, cut into 2 inch squares
  • fresh parsley (to garnish) (optional)

Recipe

  • 1 with your food processor running (steel blade) drop the garlic into the feed tube and mince, add the oil, soy, scotch, honey, salt& pepper.
  • 2 pour marinade into a large zip lock plastic bag (or use a glass bowl), add the chicken, lemon and veggies, flip the bag to coat everything evenly.
  • 3 place in fridge for at least 6 hour or overnight, rotating the ingredients every now& again.
  • 4 drain the veggies, chicken and lemon reserving the marinade.
  • 5 using 6- 10" skewers, on each, thread a piece of chicken (accordion style or fold over as necessary), add a slice of lemon, green onion, red & green pepper pieces & a mushroom, repeat another 3 times.
  • 6 place kabobs on an oil sprayed bbq grill over medium-high heat, baste with the marinade.
  • 7 cook about 3 minutes on each side approximately 12 minutes in all.
  • 8 the chicken should be brown around the edges but do not over cook or you will end up with chicken that would put the sahara to shame (you may broil the chicken if you wish).

  • 2 1/4 cups water (may use less but i always find i need more than 2)
  • 1 dash salt (very small dash!)

  • 1/2 cup blueberries
  • 1/4 cup slivered almonds (optional)
  • 2 tablespoons flax seed meal
  • 2 tablespoons maple syrup (or brown sugar)
  • 2 -4 tablespoons heavy cream or 2 -4 tablespoons half-and-half

Recipe

  • 1 bring water to a boil and add oats, stirring until a little thicker, about 5 minutes. reduce heat and simmer uncovered for 20-30 more until desired texture. they should be thick and soft but not mush. (or follow instructions on package).
  • 2 when you add the oats add salt and vanilla.
  • 3 after simmering 15 minutes add the banana to the pot, i dice it pretty small (quarter it lengthwise and chop into little pieces).

  • 1 bring the milk and sugar to just under a boil over medium heat, stirring occasionally.
  • 2 reduce heat to low, and whisk in cocoa powder until smooth.
  • 3 cook at a gentle simmer for 15 minutes, stirring often.
  • 4 melt chocolate in a double boiler.
  • 5 slowly whisk in the cocoa mixture plus 2 cups of water.
  • 6 set over iced water to chill thoroughly.
  • 7 transfer to an ice cream machine, and process according to manufacturer's directions.

Asparagus Risotto

  • 1 -2 lb fresh asparagus
  • 1 medium onion
  • 3 tablespoons butter
  • 1 1/2 cups rice
  • 1/2 cup apple juice (2 tbsp. apple juice concentrate, fill remaining space in cup with water)
  • 3 cups chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)
  • ground black pepper (optional)

Recipe

  • 1 heat the stove to a medium heat. melt the butter inside the saucepan. chop the onion and stir in with butter until union is soft, not brown (takes about 2 to 3 minutes). stir in rice, stir continuously for about two minutes. add apple juice; stir for another minute.
  • 2 begin adding chicken broth. add by 1/2 cup intervals. allow the rice to absorb the broth before adding more. cut the asparagus stems into halves. after ten minutes, add the asparagus, and continue to add the chicken broth until a creamy sauce accompanies the rice. cook until the rice is soft, and to your own satisfaction.
  • 3 dish into a bowl and sprinkle the parmesan cheese over the top. serve hot.
  • 4 serves 4.

Banana Bran Muffins

  • cooking spray
  • 2 egg whites
  • 1/4 cup sugar
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup applesauce (in jar)
  • 1 1/2 cups mashed ripe bananas
  • 1/2 teaspoon cinnamon
  • 1/2 cup skim milk
  • 2 cups self raising flour
  • 1 cup processed natural bran

Recipe

  • 1 coat a 12 cup muffin tray with cooking spray.
  • 2 beat egg whites and sugar for one minute in a medium sice mixing bowl.
  • 3 stear bicarb soda into apple sauce (it will froth) then add to bowl with banana, cinnamon and milk.
  • 4 in another mixing bowl mix flour and bran.
  • 5 gently fold the flour-bran mixture to the other mixture in one go. do not beat as this will make the muffins tough. ;).
  • 6 once mixtures are combined ( can look a bit lumpy :p) spoon equally into prepared muffin tins.
  • 7 bake about 20 minutes or until firm to touch in centre.
  • 8 allow muffins to sit in tin fo r5 minutes before turning into a wire rack to cool.
  • 9 for people who like banana and chocolate (like me) can mix chocolate chips in step 3 or 5, but before spoon into muffin tins. it tast awsome! but of corse try yourself and combine muffins with different stuff.

Bbq'd French Onions

Ingredients

  • Servings: 6
  • 6 large vidalia onions
  • 6 bouillon cubes
  • 2 tablespoons minced garlic
  • butter

Recipe

  • 1 cut both ends off the onion and remove the outer layer of skin.
  • 2 with either an apple corer or a vegetable peeler take out the core of the onion.
  • 3 with the onion sitting flat on cutting surface quarter cut the onion, without going all the way to the bottom.
  • 4 put one bouillon cube in where the core came out of.
  • 5 gently separate the quartered sections and spread butter in between each section adding the minced garlic.
  • 6 spread the top of each onion with butter.
  • 7 take heavy duty foil and carefully wrap and seal the onion.
  • 8 place on hot bbq, close the lid and cook for 45-60 mins.
  • 9 when done place on plates with the foil intact.
  • 10 open up and enjoy.
  • 11 it tastes just like french onion soup.

Abrikos (apricot Dessert)

  • 1 lb dried apricot
  • 4 cups water
  • 1 1/2 cups sugar
  • 12 -15 macaroons
  • sherry wine (optional)
  • 1 cup whipped cream

Recipe

  • 1 soak apricots overnight in water.
  • 2 bring to a boil in same water and add sugar.
  • 3 simmer 15-20 minutes.
  • 4 cool.
  • 5 place half of macaroons in serving dish.
  • 6 sprinkle with sherry, if desired.
  • 7 add half of apricots on top of macaroons.
  • 8 repeat with last macaroons and apricot sauce.
  • 9 chill.
  • 10 serve with whipped cream on top.

Abrigos De Vegetal (vegetable Wrap)

Ingredients

  • Servings: 5
  • 5 individual egg roll wraps
  • 1/4 cup broccoli (tops only)
  • 1/8 cup mozzarella cheese (more or less depending on what you like)
  • 2/3 cup tofu (or meat product, but this is a vegetarian recipe so its tofu)
  • 1 tablespoon sliced carrot
  • 1 tablespoon cabbage or 1 tablespoon lettuce
  • 1/2 teaspoon onion powder (more of less depending on what you like)
  • 1/2 teaspoon basil
  • cooking oil

Recipe

  • 1 now that you have the ingredients, your ready to cook. first, take out a stir fry pan and put a reasonable amount of cooking oil in it. next, crumble up medium or extra firm tofu and add the onion powder to it. put that mixture into the pan and let it brown on high heat. now, after that is browned up, add the carrot, broccoli, and lettuce/cabbage into the pan. cook that on medium heat for about 2 minutes then turn to simmer and add cheese. cover with a lid and let it sit for a minute. now that your insides are all done, we need to roll the egg wrap. take out a sheet of egg roll wrap and make it in a diamond shape. then, place insides directly in the middle horizontally. now, roll the bottom side up, covering the insides. next, roll the left side in and the right side inches now roll the bottom up until you have the top side folded over and it looks like an egg roll. repeat this till you have used all five of your sheets. now its time to fry them up! well, deep frying is not a must here, they taste good either way. i just fry them in the pan i used for the tofu earlier. then after their brown on both sides, let them cool off and there ya go! abrigos de vegetal!
