Baby Potatoes Supreme

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 15 new baby potatoes (about golf ball size or smaller)
  • virgin olive oil
  • 2 cloves of crushed garlic
  • salt
  • cracked black peppercorns
  • flat-leaf italian parsley

Recipe

  • 1 wash and lightly scrub potatoes.
  • 2 do not peel.
  • 3 boil potatoes in a pot until tender.
  • 4 do not overboil.
  • 5 drain potatoes and place into a serving bowl.
  • 6 coat lightly with olive oil and toss gently.
  • 7 add salt, peppercorns, garlic and chopped parsley.
