Black Beans And Rice

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 cup uncooked long-grain rice
  • 2 cups water
  • 1 tablespoon oil
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons dried oregano leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (15 ounce) can black beans, undrained
  • 2 tablespoons diced red bell peppers

Recipe

  • 1 cook rice in water as directed on package. meanwhile, heat oil in large saucepan over medium heat until hot.
  • 2 add garlic, oregano and red pepper flakes; cook and stir 1 to 2 minutes.
  • 3 add beans; bring to a boil. reduce heat; simmer 10 minutes to blend flavors, stirring occasionally.
  • 4 serve over rice and sprinkle with diced red bell pepper.
