Ingredients

- 1 cup uncooked long-grain rice
- 2 cups water
- 1 tablespoon oil
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons dried oregano leaves
- 1/4 teaspoon crushed red pepper flakes
- 1 (15 ounce) can black beans, undrained
- 2 tablespoons diced red bell peppers
Recipe
- 1 cook rice in water as directed on package. meanwhile, heat oil in large saucepan over medium heat until hot.
- 2 add garlic, oregano and red pepper flakes; cook and stir 1 to 2 minutes.
- 3 add beans; bring to a boil. reduce heat; simmer 10 minutes to blend flavors, stirring occasionally.
- 4 serve over rice and sprinkle with diced red bell pepper.
