Black Cherry And Yam Casserole

Ingredients

- 1 (40 ounce) can yams, drained
- 1/2 cup brown sugar, packed
- 2 teaspoons cornstarch
- 3/4 teaspoon orange zest, finely grated
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup apricot nectar
- 1 (15 ounce) can bing cherries, drained (pitted dark sweet)
- 1 tablespoon unsalted butter
Recipe
- 1 preheat oven to 375 degrees f, then grease an 11"x7" baking dish.
- 2 arrange yams in the prepared baking dish.
- 3 in a saucepan, whisk together the brown sugar, cornstarch, orange zest, salt, & cinnamon, then stir in the apricot nectar until smooth.
- 4 bring almost to a boil, stirring constantly, then reduce heat & simmer 2 minutes, before removing from heat.
- 5 add pitted dark sweet cherries & butter, stirring to melt the butter, then pour this cherry mixture over the yams.
- 6 bake, uncovered for 30 minutes, then serve & enjoy!
