Black Cherry And Yam Casserole

Ingredients

  • Servings: 8
  • 1 (40 ounce) can yams, drained
  • 1/2 cup brown sugar, packed
  • 2 teaspoons cornstarch
  • 3/4 teaspoon orange zest, finely grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup apricot nectar
  • 1 (15 ounce) can bing cherries, drained (pitted dark sweet)
  • 1 tablespoon unsalted butter

Recipe

  • 1 preheat oven to 375 degrees f, then grease an 11"x7" baking dish.
  • 2 arrange yams in the prepared baking dish.
  • 3 in a saucepan, whisk together the brown sugar, cornstarch, orange zest, salt, & cinnamon, then stir in the apricot nectar until smooth.
  • 4 bring almost to a boil, stirring constantly, then reduce heat & simmer 2 minutes, before removing from heat.
  • 5 add pitted dark sweet cherries & butter, stirring to melt the butter, then pour this cherry mixture over the yams.
  • 6 bake, uncovered for 30 minutes, then serve & enjoy!
