Black Bean And Corn Wraps

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 (16 ounce) can corn, drained
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 medium zucchini, chopped
  • 1 garlic clove, sliced as thin as possible
  • 1 teaspoon ground cumin (i like a little more)
  • 2 teaspoons lime juice (or as much as you want)
  • tortilla (whatever kind you like)
  • mozzarella cheese, grated

Recipe

  • 1 place chopped vegatbles in bowl and add the first teaspoon of lime juice. let it sit for 5-10 minute.
  • 2 preheat oven or toaster oven to 350.
  • 3 heat frying pan with oil or spray.
  • 4 add zucchinni, onion, peppers, and garlic. cook for 5-7 minute.
  • 5 add cumin. cook for another 3-5 minute.
  • 6 in a bowl mash the black beans.
  • 7 add corn and cooked vegetables.
  • 8 spread the filling on a tortilla, top with desired amount of cheese, roll up.
  • 9 heat in oven for about 12 min or until slightly crispy. enjoy!
  • 10 also good with a little low fat sour cream.
