Black Bean And Rice Soup

Ingredients

- 1 onion, chopped
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 3 carrots, diced
- 2 (15 ounce) cans fat free chicken broth
- 2 (15 ounce) cans fat free black beans, drained
- 1 cup instant rice
- 1 cup salsa
- 1/2 teaspoon garlic salt
- 1/2 teaspoon oregano
- 1/8 teaspoon cayenne (i like more)
- 1/4 teaspoon black pepper
Recipe
- 1 in a large saucepan cook onion, celery, bell pepper and carrots in chicken broth till tender.
- 2 stir in beans, rice, salsa and seasonings.
- 3 bring to a boil, turn off heat, cover and let stand 5 minutes.
