Black Beans & Salsa

Ingredients

  • Servings: 4
  • 2 vine-ripe tomatoes, seeded & diced
  • 1 bunch cilantro, minced
  • 1 jalapeno, seeded & minced
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • salt & pepper, to tase
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 small yellow onion, diced
  • 1 (16 ounce) can black beans, drained & rinsed
  • 1/4 cup orange juice
  • 1 1/2 teaspoons cumin
  • salt & pepper, to taste

Recipe

  • 1 mix salsa ingredients at least six hours in advance.
  • 2 saute onions in olive oil; add garlic just before onions are done.
  • 3 add the remaining ingredients & simmer until the liquid is reduced.
  • 4 serve immediately.
