Black Beans & Salsa

Ingredients
- Servings: 4
- 2 vine-ripe tomatoes, seeded & diced
- 1 bunch cilantro, minced
- 1 jalapeno, seeded & minced
- 1 garlic clove, minced
- 2 tablespoons lime juice
- salt & pepper, to tase
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 small yellow onion, diced
- 1 (16 ounce) can black beans, drained & rinsed
- 1/4 cup orange juice
- 1 1/2 teaspoons cumin
- salt & pepper, to taste
Recipe
- 1 mix salsa ingredients at least six hours in advance.
- 2 saute onions in olive oil; add garlic just before onions are done.
- 3 add the remaining ingredients & simmer until the liquid is reduced.
- 4 serve immediately.
