Black-eyed Peas

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 1 lb black-eyed peas
  • 6 cups water
  • 3 chicken flavored bullion cubes
  • 1/2 cup celery, chopped
  • 3 onions, chopped
  • 4 garlic cloves, sliced
  • 4 tablespoons coconut oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon liquid smoke
  • 2 bay leaves

Recipe

  • 1 heat coconut oil in pot over medium heat.
  • 2 add onions, celery, and salt. cover and sweat for five or so minutes, until vegetables begin to turn translucent.
  • 3 add garlic and continue cooking for two more minutes.
  • 4 mix in remaining ingredients and bring to a boil. cover and simmer over low heat for 45 minutes, or until beans are tender.
  • 5 serve plain or over rice.
