Anjir Murabbasi (fig Jam)

Ingredients

  • Servings: 50
  • 2 1/2 lbs fresh figs, chopped
  • 5 1/2 cups sugar
  • 1 teaspoon citric acid
  • 1 tablespoon vanilla extract

Recipe

  • 1 put the figs in a large cooking pot, stir in half of the sugar and spread the remaining sugar over evenly, cover and set aside for 8-10 hours.
  • 2 simmer over low heat for 50-60 minutes, stirling carefully from time to time without squashing the fruit.
  • 3 add the citric acid and vanilla extract, stir and leave to cool. once cooled, jam is ready to be canned.
