Apricot Walnut Tea Bread

Ingredients
- 1 cup dried apricot
- 1 1/2 cups boiling water
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 cup coarsely chopped walnuts
Recipe
- 1 preheat your oven to 350°; grease a 9-inch loaf pan.
- 2 cut the apricots into small pieces and places in a bowl; add the boiling water and set aside to cool.
- 3 sift the flour, baking powder, and salt and set aside.
- 4 in a large bowl, combine the egg, vanilla, sugar and oil; beat until blended.
- 5 gradually add the apricot mixture, beating constantly.
- 6 add the flour mixture and beat until smooth; stir in the nuts, then scrape the dough into the prepared pan.
- 7 bake for 1 hour.
