Black Bean And Rice Skillet

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 medium onion, chopped
  • 1 small green bell peppers or 1 small red bell pepper, chopped
  • 1 tablespoon olive oil
  • 2 cups cooked black beans
  • 1 1/2 cups chicken broth or 1 1/2 cups vegetable broth
  • 1/2 cup uncooked rice
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried thyme
  • 2 garlic cloves
  • 1 bay leaf
  • 1/2 cup sharp cheddar cheese, shredded (optional)

Recipe

  • 1 in a frying pan, saute onion and bell pepper until soft (about 5 minutes).
  • 2 stir in beans, broth, rice, chili powder, thyme, garlic and bay leaf. bring to boil. reduce heat and simmer covered until rice is done: 20 minutes for rice, 40 for brown rice.
  • 3 remove from heat. remove bay leaf.
  • 4 sprinkle cheese on top and serve.
