Black Bean And Rice Skillet

Ingredients

- 1 medium onion, chopped
- 1 small green bell peppers or 1 small red bell pepper, chopped
- 1 tablespoon olive oil
- 2 cups cooked black beans
- 1 1/2 cups chicken broth or 1 1/2 cups vegetable broth
- 1/2 cup uncooked rice
- 1/4 teaspoon chili powder
- 1/4 teaspoon dried thyme
- 2 garlic cloves
- 1 bay leaf
- 1/2 cup sharp cheddar cheese, shredded (optional)
Recipe
- 1 in a frying pan, saute onion and bell pepper until soft (about 5 minutes).
- 2 stir in beans, broth, rice, chili powder, thyme, garlic and bay leaf. bring to boil. reduce heat and simmer covered until rice is done: 20 minutes for rice, 40 for brown rice.
- 3 remove from heat. remove bay leaf.
- 4 sprinkle cheese on top and serve.
