Black Bean And Roma Tomato Soup

- 3/4 cup chopped red onion
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1 roma tomato, chopped
- 3/4 teaspoon oregano
- 3/4 teaspoon cumin
- 1 (15 ounce) can black beans, rinsed and drained
- 2 cups chicken broth
Recipe
- 1 in a large frying pan or wok over medium heat combine onion, oil, garlic, tomato, cumin, and oregano and cook until soft, about 5 minutes.
- 2 add black beans and chicken broth, and cook stirring occasionally for about 15 minutes. you can mash up some beans on the side of the pan if you want a bit of a thicker texture to your broth.
