Black Bean And Roma Tomato Soup

Ingredients

  • Servings: 3
  • 3/4 cup chopped red onion
  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 1 roma tomato, chopped
  • 3/4 teaspoon oregano
  • 3/4 teaspoon cumin
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups chicken broth

Recipe

  • 1 in a large frying pan or wok over medium heat combine onion, oil, garlic, tomato, cumin, and oregano and cook until soft, about 5 minutes.
  • 2 add black beans and chicken broth, and cook stirring occasionally for about 15 minutes. you can mash up some beans on the side of the pan if you want a bit of a thicker texture to your broth.
