Mmmm Mango Salsa

Ingredients

  • Servings: 2
  • 2 mangos (preferably honey mangos) - peeled, seeded, and diced
  • 2 large roma (plum) tomatoes, seeded and diced
  • 2 large cloves garlic, minced
  • 1 shallot, minced
  • 1 green chile pepper, seeded and diced
  • 1 lime, juiced
  • 3 tablespoons pineapple juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt

    Preparation Time: 30 mins Ready Time: 1 hr 30 mins

  • stir the mangos, tomatoes, garlic, shallot, green chile pepper, lime juice, pineapple juice, olive oil, and salt together in a bowl; refrigerate 1 hour to allow the flavors to mingle before serving.
