Black Bean Avocado Salsa

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1/3 cup lime juice
  • 1/2 cup olive oil
  • 2 minced garlic cloves
  • 1 teaspoon salt
  • 1/8 teaspoon ground cayenne pepper
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (12 ounce) cans kernel corn
  • 2 avocados, peeled, piited and chopped
  • 1 red bell pepper, chopped
  • 6 green onions, thinly sliced
  • 1/2 cup chopped fresh cilantro

Recipe

  • 1 mix together lime juice, olive oil, garlic, salt and cayenne pepper in a big bowl.
  • 2 add all other ingredients, stir well and refrigerate.
  • 3 serve cold with tortilla chips.
