Black Beans

Ingredients

  • Servings: 30
  • 1 lb black beans
  • 4 ounces olive oil
  • 1 large yellow onion, diced
  • 1 teaspoon minced garlic
  • 1 large green bell pepper, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon vinegar
  • 1 ounce diced pimento

Recipe

  • 1 pick through beans and wash thoroughly.
  • 2 soak beans in cold water for 1 to 2 hours.
  • 3 drain and place in a pot and cover with fresh water.
  • 4 cook covered on medium heat until beans are tender.
  • 5 drain any remaining liquid and add remaining ingredients.
  • 6 cook for 15 minutes or until onions are just tender.
