Ingredients

- 1 lb black beans
- 4 ounces olive oil
- 1 large yellow onion, diced
- 1 teaspoon minced garlic
- 1 large green bell pepper, diced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon vinegar
- 1 ounce diced pimento
Recipe
- 1 pick through beans and wash thoroughly.
- 2 soak beans in cold water for 1 to 2 hours.
- 3 drain and place in a pot and cover with fresh water.
- 4 cook covered on medium heat until beans are tender.
- 5 drain any remaining liquid and add remaining ingredients.
- 6 cook for 15 minutes or until onions are just tender.
