Braised Fingerling Potatoes With Rosemary

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 (28 ounce) bag fingerling potatoes
  • 2 shallots, minced
  • 1 1/2 teaspoons rosemary (or 3 sprigs fresh)
  • 2 teaspoons butter
  • 2 1/2 cups chicken broth
  • salt and pepper

Recipe

  • 1 1. slice potatoes long ways in half.
  • 2 2. in large skillet, melt butter.
  • 3 3. arrange potatoes in single layer with rosemary and shallot.
  • 4 4. cover and bring to boil. lower heat and simmer 20-25 minute.
  • 5 5. remove shallots and rosemary, discard.
  • 6 6. take out potatoes.
  • 7 7. boil remaining liquid 5 min uncovered.
  • 8 8. pour over potatoes and serve.
