Braised Fingerling Potatoes With Rosemary

Ingredients

- 1 (28 ounce) bag fingerling potatoes
- 2 shallots, minced
- 1 1/2 teaspoons rosemary (or 3 sprigs fresh)
- 2 teaspoons butter
- 2 1/2 cups chicken broth
- salt and pepper
Recipe
- 1 1. slice potatoes long ways in half.
- 2 2. in large skillet, melt butter.
- 3 3. arrange potatoes in single layer with rosemary and shallot.
- 4 4. cover and bring to boil. lower heat and simmer 20-25 minute.
- 5 5. remove shallots and rosemary, discard.
- 6 6. take out potatoes.
- 7 7. boil remaining liquid 5 min uncovered.
- 8 8. pour over potatoes and serve.
