Asparagus With Citrus Vinaigrette

Ingredients

  • Servings: 4
  • 1 lb asparagus, trimmed
  • 3 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 2 teaspoons sugar
  • salt and pepper
  • 1/3 cup olive oil

Recipe

  • 1 cook asparagus in boiling water for 3-5 minutes, drain, put in ice water to stop cooking.
  • 2 mix remaining ingredients in a jar, shake well; drizzle over asparagus.
