Bean Soup With Greens

Total Time: 19 mins Preparation Time: 2 mins Cook Time: 17 mins

Ingredients

  • 1 1/2 lbs swiss chard or 1 1/2 lbs beet leaves
  • 6 cups chicken broth
  • 1 garlic clove, crushed
  • 1 cup cooked beans
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • grated parmesan cheese (to garnish)
  • red pepper flakes (to garnish)

Recipe

  • 1 add greens to pot of boiling water and cook 7 minutes. drain and squeeze well. bring broth to simmer, add garlic, and greens. rinse beans and add. simmer partially covered 10 minutes.
  • 2 sprinkle with salt and pepper to taste. garnish as desired.
