Bean Soup With Greens

Ingredients
- 1 1/2 lbs swiss chard or 1 1/2 lbs beet leaves
- 6 cups chicken broth
- 1 garlic clove, crushed
- 1 cup cooked beans
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- grated parmesan cheese (to garnish)
- red pepper flakes (to garnish)
Recipe
- 1 add greens to pot of boiling water and cook 7 minutes. drain and squeeze well. bring broth to simmer, add garlic, and greens. rinse beans and add. simmer partially covered 10 minutes.
- 2 sprinkle with salt and pepper to taste. garnish as desired.
