Ingredients

- 2 (16 ounce) cans black beans
- 2 cups frozen corn
- 1/2 cup chopped onion
- 2 garlic cloves
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1 teaspoon cumin
- 2 bay leaves
- 1/2 cup fresh cilantro
Recipe
- 1 sauté onion in oil with cumin, and salt until onions are translucent.
- 2 add garlic.
- 3 add beans, corn, and bay leaves.
- 4 let cook 10 minutes.
- 5 serve over rice with cilantro sprinkled on top.
