Black Beans And Corn

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 (16 ounce) cans black beans
  • 2 cups frozen corn
  • 1/2 cup chopped onion
  • 2 garlic cloves
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 2 bay leaves
  • 1/2 cup fresh cilantro

Recipe

  • 1 sauté onion in oil with cumin, and salt until onions are translucent.
  • 2 add garlic.
  • 3 add beans, corn, and bay leaves.
  • 4 let cook 10 minutes.
  • 5 serve over rice with cilantro sprinkled on top.
